Egg Pie

Filling Ingredients

1 cup fine sugar
1 piece egg, separate white from yolk
3 pieces raw eggs
1 3/4 cups evaporated milk
1 teaspoon vanilla extract

Pie Crust Ingredients

1 cup unsalted butter, chilled and cute into cubes
2 tablespoon fine sugar
1/4 to 1.2 cup cold water
2 1/2 cups all-purpose flour
1 teaspoon salt


1. Creating the crust

a. Mix well the sugar, flour, and salt.
b. Put the butter in the middle and mix using a pastry mixer.
c. Pour the cold water slowly while mixing the ingredients. Continue mixing all the ingredients.
d. Gather the dough, mould, and make a ball-shaped figure.
e. Put the dough in the fridge for at around 30 minutes to make the butter a hard.
f. Flatten the refrigerated dough using a rolling pin, You may sprinkle flour on a clean flat surface to avoid the dough from sticking on the surface. Create about 10 inch circular wide of flattened dough.
g. Position the flattened dough on top of the baking pan. Cut the extra edge using a pair of scissors.
h. Put the dough in the fridge while doing the filling.

2. Gently pierce the dough base with a fork in random places to let the air flow.

3. Place a baking parchment paper over the base and fit it properly.

4. Put uncooked rice or dried beans over the parchment paper to prevent the pastry from rising due to air bubbles.

5. Preheat the oven to about 400 degrees Fahrenheit and bake the crust for about 12 minutes or until the colour turns golden brown.

6. Let it cool for a while around 3-5 minutes.

7. Put aluminium foil at the edges of the crust to prevent it from being burnt.

8. Making the filling

a. Heat the evaporated milk in the microwave oven for about 2 minutes.
b. Combine the 3 raw eggs and the separated egg yolk in a large mixing bowl, then whisk.
c. Slowly add the fine sugar while whisking.
d. Mix-in the vanilla extract then whisk until every ingredient is properly incorporated.
e. Pour-in the scalded milk then mix thoroughly.
f. Use an electric mixer to beat the egg white until it forms soft peaks.
g. Fold the processed egg white in the milk-eggs-sugar mixture.

9. Preheat the oven to about 350 degrees Fahrenheit.

10. Slowly pour the filling mixture on the refrigerated pie crust.

11. Bake for about 15 minutes at 350 degrees Fahrenheit then lower the heat to 325 degrees Fahrenheit and continue baking for 30 to 40 minutes more.

12. Remove from the oven and let cool.

13. Serve and enjoy this sumptuous dessert.
